At the GOC we work as a team on everything. That includes our lunch. We love to cook from scratch and today we had Cuban sandwiches. Here is our recipe and enjoy the photos!
Ingredients
-2 1/2 pounds of Pork Roast (Boston Butt)
-24 oz sliced ham
-jar of thinly sliced dill pickles
– 24 slices swiss cheese
-4 loaf of Cuban Bread
-mayonnaise
-mustard
-1 bulb garlic
-1 onion
-chicken broth 3 cups
-Spices for pork roast (salt, pepper, oregano, adobo, lime juice, cumin)
-olive oil
1. Turn the instapot on and select the Sear setting. Add olive oil to the bottom of the instapot. Season the pork while waiting for the instant pot to warm up. Add the garlic, onions and the pork roast. Sear on all sides until browned.
2. Add the chicken broth to the instapot. Close the lid and select the Meat/Stew button. (About 50 min.)
3. When the timer goes off, release the steam valve until pressure subsides. Take the pork and shred with forks.
4. Take the Cuban bread and cut up the middle and then portion for the size of each sandwich.
5. To assemble the sandwich, first put mustard on the bottom, then add 4 slices of ham, followed by two slices of swiss cheese. Last, add the shredded pork to the top and close the sandwich.
6. Heat a pan to medium heat. Butter the top of the bread of each sandwich. When the pan is hot enough, place the sandwich in the pan and press with a spatula or pot until golden brown. Flip the sandwich and press the un cooked side. Keep on the heat until the cheese melts. Remove from the pan and cut across diagonally. Plate and enjoy.

Instant Pot is great for Pork!!! Aaron and Mark are hard at work. InstantPot was great for the black beans as well!!! Along with the Cuban sandwich, we had homemade soup!!!
